India has been home to innovative business ideas from the very beginning. Entrepreneurs are pioneered by startup ideas that have become global names today.

Ahmedabad-based Jashuben’s pizza There’s a business idea that not everyone likes to bake an Indian out of those pizzas. Jashuben created a version of Pizzeria in Ahmedabad more than 30 years ago. She stuffed a piece of sugar and jaggery in her pizza toppings to complement the local flavor.

In 2013, the then Chief Minister of Gujarat Narendra Modi expressed the entrepreneurial spirit of Jashuben and Underben. Speaking to the Federation of Indian Chambers of Commerce and Industry or FICCI’s Women Wing of Industry Lobby, Narendra Modi Jashuben’s pizza was a secret guilty pleasure in Ahmedabad.

Power pair travel

Underben and her husband, Joravar Jashuben, were working as cooks in the early 90’s. Soon Underben expressed his desire to do his business and Jashuben extended a helping hand. She gave Underben some seeds as a loan venture that helped her start her own business.

Pizza ovens were not readily available at the time and the cost to professionals was high. However, the craze for pizza in the market was growing and Underben wanted to offer it as street food but with a twist.

Jashuben and Underben developed the design and concept of an oven working on a cooking gas cylinder. The oven was as tall as a cupboard and had eight layers. The pizza will be placed on the first layer and every few minutes slowly move to the top layer and reach the eighth layer in 1 minute minutes. The oven could bake 25 pizzas at a time.

Today, the same oven is used to make pizza.

What makes pizza so amazing?

There are no special ingredients or exotic vegetables used here such as jalepos, baby corn or olive toppings. Even so, pizza has a delicious flavor that has attracted customers over the years.

The pizza is made at home by rolling out flour and tomato puree. A layer of sauce is spread on a crunchy and biscuit-like crust and placed on top of the onions and capsicum. The grated local in the dish is then placed on top with a generous layer of cheese, covering all the ingredients underneath.

The menu includes Italian, Jain, Baked Cheese, Plain Cheese, Margarita, Double Cheese and Pineapple Cheese Pizzas priced from Rs 80 to Rs 100.

Passing down heritage

Underben and her husband were in business after Jashuben’s death a few years ago. His daughter-in-law after the marriage of his daughter Rajendra Singh Has been running the business with innovative ideas since 2004-05.

According to Rajendra, he has three shops in Ahmedabad, each of which sells pizza for around Rs 300,000 a day.

About 60% of those who visit food consumers come frequently over the years, while the rest are school and college youth.
